Gorgonzola is made in different ways. Not just the shit you can buy in a plastic tub that says "Italian Gorgonzola". HINT*** If the label says "Italian", run away! Unless, of course you're looking for that special Equadorian Gorgonzola on the shelf below. Gorg can only be made in and around the village of Gorgonzola in the province of Lombardia(think North). It is a DOP cheese, which means that it has a name-controlled status. All cheeses labeled Gorgonzola are to be made within certain guidelines of aquiring the milk, coagulation and aging. This also includes what breed of cow can be used for the milking. In Italy, there are 30 cheeses that have been awarded the DOP staus, wheras in France, there are as many as 50. Fifteen Spanish cheeses have the DO status and in Switzerland all of their cheeses are protcted by the gov't status.

Food Lovers,
Going to cook a little Indian tonight(food, that is...). Everything is hot and cooked down to a super-flavored, unique paste that most of the world considers "curry". Although curry is a spice, mixed with Tumeric to give it that nuclear urine color, it is also a dish. In the UK, a curry is pretty much going out to an Indian resturant, however there is so much more involved. We're talking about food from the other side of the planet! I was in a Specialty grocery today and the only things I saw familiar were Cheetos and rice. The only "curry" I knew was in the shape of a transvestite in the Rocky Horror Picture Show... I'll let you know if I still has a digestive system afterwards.
